Roasted Cumin Cashews: Addiction Warning

I have these requested by friends and family throughout the year. This delightful recipe really spices up your average cashew, literally.

Roasted Cumin Cashews

Roasted Cumin Cashews

  • 1 each egg white
  • 1 tbl water
  • 2 cans 9 ¾ oz each salted whole cashews (or 3 1/3 cups)
  • 1/3 cup sugar
  • 3 tsp chili powder
  • 1 tsp salt
  • 2 tsp ground cumin
  • ½ tsp cayenne pepper

1. Preheat oven to 250

2. In a large bowl, whisk egg whites and water

3. Add cashews and toss to coat

4. Transfer to a colander; drain for 2 minutes

5. In a separate bowl, combine the remaining ingredients; add cashews and toss to coat

6. Arrange in a single layer in a greased 15x10x1 baking pan

7. Bake uncovered for 52 minutes, stirring once at 25 minutes

8. Remove from oven and let cool, store in an airtight container

Yield: 3.5 cups

NOTE: DO NOT line cookie sheet with aluminum foil in the oven, when it dries it will peel pieces of the aluminum foil off with it. You can thank me later for learning this lesson the hard way.
