Cheesy Spinach Lasagna Recipe

I was recently nominated to host Thanksgiving this year. I should mention this will be the first holiday I’ve ever had to do the cooking for. I’m usually the one that brings the side dish or dessert, so in my very over prepared fashion, I’m preparing my menu in advance.

My in-laws are vegetarian, so in addition to cooking a turkey with all the trimmings, I will be making this Cheesy Spinach Lasagna as well. I had to make several changes to the original recipe to get it just right. I’m glad I did, because it turned out delicious.

Cheesy Spinach Ingredients

Cheesy Spinach Lasagna

  • 1 pkg. (9 oz) frozen chopped Spinach, thawed, patted dry
  • 1 cup Ricotta Cheese
  • 1 cup (4 oz) shredded Parmesan Cheese
  • 2 cups (8 oz) shredded Mozzarella Cheese, divided
  • 3 eggs
  • 2 Tbl. Italian Herb seasoning
  • 1 tsp. Garlic Powder
  • 1 tsp. Salt
  • 1/2 tsp. Fine Grind Black Pepper
  • 4 oz. sliced mushrooms (if using canned make sure to drain mushrooms)
  • 6 lasagna noodles
  • 1 jar (26 oz) prepared spaghetti sauce

1. Preheat oven to 350

2. Combine spinach, ricotta cheese, parmesan cheese, 1 cup mozzarella cheese, eggs, italian herb seasoning, garlic powder, salt and black pepper in medium bowl

3. Stir in mushrooms and set aside

4. Line a greased 13 x 9-inch pan with a thin layer of spaghetti sauce

5. Top sauce with 3 lasagna noodles

6. Take half of the spinach mixture and spread on top of noodles

7. Pour half of spaghetti sauce over all

8. Repeat

9. Sprinkle remaining 1 cup mozzarella cheese on top

10. Cover with foil

11. Heat in preheated oven for 25 minutes

12. Remove foil and continue baking for 10 minutes

13. Remove from oven and let rest for 10 minutes before cutting for easy serving

NOTE: This recipe originally called for no-boil lasagna noodles. This did not work on my first attempt. I highly suggest preparing 6 noodles beforehand. Also, if making this ahead of time, wrap in foil and place in refrigerator.  When you decide to bake adjust your cooking time to 45 minutes, taking off the foil for the last 15 minutes.
