This is the perfect hearty meal on a cold rainy day. It’s the perfect kind of meal that sticks to your bones and warms you up for the rest of the night. These are all items you can keep stocked in your pantry, sans the chicken of course.
Chicken & Broccoli Casserole
Ingredients:
- 1 package of Stove Top Chicken Stuffing (unprepared)
- 1 package of 16 oz broccoli florets
- 1.5 lbs of chicken breasts, or tenderloins, cooked and cubed
- 4 cans(10.75 oz) Campbell’s Cream of Chicken Soup
- 1 cup Swanson Chicken Stock
- Serve with noodles or rice
Directions:
1. Preheat oven to 350
2. Cook chicken breasts until no longer pink, drain excess juice
3. Prepare broccoli, if using frozen broccoli, thaw now and drain excess water as well
4. In bottom of 9 x 13 pan, line bottom with broccoli and chicken
5. Mix together Campbell’s Cream of Chicken Soup and 1 cup of Swanson Chicken Stock
6. Pour soup mixture over broccoli and chicken
7. Top with one package of Stove Top Stuffing dry mix
8. Bake for 45 minutes
9. Serve with rice or noodles
NOTES: Replace chicken with turkey if wish, just swap out the chicken stuffing to turkey and use vegetable stock instead of chicken. With either choice you’ll achieve a delicious winter meal.
