I don’t like to pick favorites, but I can’t help single out this recipe for Spiced Chai Tea from my entire cookbook. I love making batches of this to keep for myself and give away during the year for gifts.

A few fun facts before we get started, Chai is pronounced as a single syllable word and rhymes with pie. Chai is actually the word for tea in various parts of the world and has played key roles in many cultures. This cinnamon spiced treat originates in India and consists of a spiced milk, tea and sweetener.

My sister-in-law and I discovered this recipe is perfect for when you’re sick. The milk and warmth of this tea coats your throat and calms irritation. (Warning: it does not make irritating people calm, it simply calms the irritation in your throat. Thought I might need to clarify that).

Spiced Chai Tea Recipe

Spiced Chai Tea
Ingredients:

  • 3 cups non-fat dry milk powder
  • 1½ cups sugar
  • 1 cup unsweetened instant tea (decaffeinated or caffeinated)
  • ¾ cup vanilla powdered non-dairy creamer
  • 1½ tsp ground ginger
  • 1½ tsp ground cinnamon
  • ½ tsp ground cardamom
  • ½ tsp ground cloves

Directions:
1. Combine all ingredients in a large bowl and mix together

2. In a food processor pour in the dry mixed ingredients; cover and process until powdery. (I do not suggest using a blender, it will process all ingredients, but not into the fine powder it requires)

3. Store in air tight container in a cool dry place for up to six months

To prepare 1 serving:
Dissolve 3 tablespoons of mix in ¾ cup boiling water; stir well.
Dollop with whip cream if desired

NOTE: You can replace normal cane sugar with Stevia (a natural sugar) if willing.

Here are a few fun ways I have gifted this tea recently:

1. Jars purchased at Costco World Market and the decorative box was purchased at Michael’s in their cake decorating section.

2. I purchased these fun snowman jars at Goodwill and the adorable tags at Michael’s. These tags are perfect for holiday crafts and gifts. In my best Carson Kressley sing-song voice, “Love It”.
