Lately my husband has been on a spinach kick. So when I discovered this Chicken Florentine recipe I was delighted to add to his spinach envy.

Chicken Florentine Casserole

Chicken Florentine Casserole

  • 1 lb pkg. Chicken Tenderloin
  • 2 tbsp Olive Oil
  • ¼ cup Butter
  • 4 tsp Minced Garlic, divided
  • 1 tbsp Lemon Juice
  • 1 can (10.75 oz) Campbell’s Cream of Mushroom Soup
  • 1 tbsp Italian Seasoning
  • ½ cup Milk
  • ½ cup Grated Parmesan Cheese
  • 1 bag (13.5 oz) Spinach, cooked & drained
  • 1 pkg Sliced Mushrooms (4 oz)
  • 2 cups Shredded Mozzarella Cheese

1. Preheat oven to 380

2. Heat olive oil over medium heat; add 1 tsp of minced garlic once oil is heated

3. Add cut up chicken pieces to oil immediately to make sure garlic does not burn, and cook until no longer pink

4. While chicken is cooking, melt butter in a medium saucepan over medium heat

5. Stirring constantly, mix in garlic, lemon juice, cream of mushroom soup, italian seasoning, milk and parmesan cheese; heat through and set aside

6. Cook spinach; drain. Arrange spinach over bottom of 9×9 baking dish

7. Cover spinach with sliced mushrooms (I prefer to dice our mushrooms)

8. Pour half of the soup mixture over mushrooms

9. Arrange chicken pieces in the dish, and cover with remaining soup mixture

10. Top with Mozzarella cheese

11. Bake 30 minutes
